Where is our olive oil produced?

Herdade de Castros olive oil is produces exclusively though a sustainable agricultural system in the plains of Alentejo’s northwest area, with an approximate surface of 400 ha, where the clay-calcareous soil is very rich and deep.

What about the climate?

The climate in this region is very hot and dry in the summer (about 40 º) and cold in the winter (about 4 º).
All these edaphic-climatic and varietal characteristics are crucial to produce high quality oils that normally have low acidity, are moderately fruity and very pleasant to the palate, yellowish-green at the beginning of the campaign suggesting the aroma of green leaf, fresh herb and apple flavor, and yellow when mature, remembering nuts.

What olive varieties are used?

The varieties of olives used for their elaboration are Azeiteira, Carrasquenha, Galega and Cobrançosa.

Extra virgin olive oil

Our product is an extra virgin olive oil, which means that the extraction process uses only the ambient temperature by removing only the high-quality oils that differentiate it from the industrial refined olive oils.
It is an olive oil with maximum acidity of 0.8%. Olive oil of superior quality with intense flavours and aromas of healthy olives. It does not present any organoleptic defects

Organoleptic analysis:

It is a sensory analysis- smell and taste- that gives
attributes (fruity, bitter, spicy, apple or almond, between other parameters) and defects (fusty, rancid or musty flavours).

VL olive oil is moderately fruity with an apple flavour at the start of the campaign.
